A bostock is a classic, kind of old-school pastry that is a cross between French toast and an almond croissant. We take brioche bread, soak it in simple syrup, topped it with almond frangipane, seasonal jam, and toasted sliced almonds, then baked it until crisp and golden (while retaining it’s soft interior).
This bostock features house-made quince jam, using local fruit from Liberty Orchards in Highland. If you haven’t had a quince before…it’s in the same family as apples and pears and tastes like a blend of the two!
